它起源于地中海沿岸，野生种滨海甜菜是栽培甜菜的祖先，大约在1500年前从阿拉伯国家传入中国。它主根肥大而形成肉质块根，以楔形、圆锥形、纺锤形和锤形为主，可通过热水浸出糖汁，然后用碳酸法清净，经一系列工序制出白砂糖，再加工成绵白糖。
